Lentil Soup:)



Lentil Soup:) Extremely easy, nutricious and wholesome too. The lentil used here is whole masoor dal (brown skinned lentils which are orange inside) which has been cooked until just soft, not mashed, so that they are beautifully visible in the soup along with the vegetables.



Whole masoor dal (Brown coloured lentil which is orange coloured inside) - 1 cup.
Tinned CAnned Tomatoes (Hunts) - 400 grams
Onions - 1 medium chopped 
Dried Basil - 1/2 tsp
Coriander Powder - 1 tsp
Garlic - 1/2 tsp, chopped fine
Carrot - 1 small, diced
Celery - 1 tsp, chopped
Salt and Pepper - According to taste
Parmesan Cheese (optional) - 1 tbsp
Cook the lentil in the pressure cooker with enough water till JUST DONE. Dont make it mashed. When the pressure drops, add the diced tomatoes (Use the tinned diced tomatoes from 'Hunts'. It gives a different flavour), chopped onions, dried basil, coriander powder,  chopped garlic, carrot diced, chopped celery and salt. Add water and cover and cook till the veggies are done. Adjust salt, add pepper and adjust the water content. The soup should be clear with the lentil and veggies visible in it. Serve garnished with parmesan cheese (optional, which I have not done here).
