Grilled Chicken Cutlets:)


The first taste of this is from my school days. This particular recipe has been modified each time I have made this. I dont generally fry the cutlets, something which I have mentioned earlier. I drizzle some oil on it and grill it. It gets perfectly done into a golden brown colour. Grilling is not for any 'health' purpose, it is more because I hate to 'waste' cooking oil to 'deep fry' anything on earth!

Minced chicken- 250 gms,
Chopped onions- 3/4 cup,
Chopped ginger- 1 tsp,
Chopped garlic- 1/2 tsp,
2 large potaoes boiled and mashed,
Turmeric powder-1/2 tsp,
Red chilly powder- 11/2 tsp,
Coriander powder 11/2 tsp,
Garam masala- 1/2 tsp.

Cook minced chicken with turmeric and salt, adding a little water, chicken mince will leave some water, and gets cooked very fast. Let all the water evaporate and take the mince off the fire, dry, to get things easier for the coming stages. Heat oil, add chopped onions, chopped ginger and garlic, and chopped green chillies (optional). Fry till the onion changes into a light brown colour. Add chilly powder, coriander powder and turmeric powder. Fry. Add boiled, mashed potatoes. Mix well. Add the cooked mince into this. Mix again. Add a little bit of garam masala. Mix further. Add lots of chopped coriander leaves, and a bit of chopped mint leaves, if you have some. Mix and leave on the fire till the mixture is very dry and containing very little moisture. Let it cool. When cool, shape into whatever shape you want, dip in beaten egg, and roll in breadcrumbs and deep fry. I have grilled it. Both ways are fine.
