Baked Bread Rolls:)
If you have a loaf of bread in your kitchen, the innumerable snack options you can come up with, are amazing! That is apart from the simple bread, butter, jam option:) There is this common snack made in most Indian homes, called 'Bread Rolls'. A spiced potato filling is made, which is filled inside a bread slice, rolled up and deep fried in oil. As the world is turning towards healthy eating, the 'bread roll' needs to be altered to fit in the present day kitchen. And that is what this post is all about.
The recipe below, is just a guideline. Creativity is the key here, as far as the filling is concerned. I have used Cottage Cheese in this recipe, but it can be changed in any manner, keeping in mind the fact that it needs to be a dry filling, not a wet/runny one, to prevent spills while baking.
Ingredients:
Brown or White Bread Slices - 8
Grated Cottage Cheese (Paneer) - 1/2 cup
Onion, finely chopped - 1
Green Chillies, finely chopped - 2 (or according to one's tolerance)
Cilantro/Green Coriander, chopped - 1/4 cup
Oil to brush the top
Salt to taste.
Method:
Preheat the oven to 140 degrees C.
Trim the edges of the bread slices and lightly flatten the bread slice using a rolling pin.
In a bowl, mix together the cottage cheese, onion, green chillies, cilantro and salt.
Put about 1 tbsp of the the cottage cheese mixture in one corner of the bread and roll like a cigar.
Dampen the tip with water to make sure the roll does not open out.
Lightly brush the rolls with a little oil.
Place the rolls on a greased baking tray and bake for 5 to 8 minutes or until the rolls are golden brown in colour and crispy.
Serve hot with a dip of your choice.
Notes:
The filling can be altered according to your choice.
Spiced potato mixture works well with this recipe.
A mix of grated cheddar cheese and finely chopped onions and green peppers with a dash of oregano, salt and black pepper would turn out wonderful!
