Baked Lentil Squares:)

Positiveness is something that I love in life! Trials and tribulations are part of life and the fact is that no one has it easy in life, whether it is acknowledged or not. I believe in having the right attitude towards life and thereby living life to its fullest :) And then watch everything falling into place, slowly, one by one...

Food, and the making of it, has always been a comfort factor to me. The creativity involved brings in a lot of postive energy.

Today, I made Baked Lentil Squares, specially for my mother in law. She is an amazing source of positiveness in our lives. She is my pillar of support and lots more!






 
This is a recipe from Nita Mehta's Diabetic Cookbook, which I had bookmarked long back, but got around to making it, only today.

This is how the recipe goes:

Gram Lentils (Chana Dal) - 1 cup
Grated Carrots or Bottlegourd (lauki) - 2 cups
Onion, finely chopped - 1
Green Chillies, finely chopped - 2 or 3
Coriander Leaves, finely chopped - 1/2 cup
Salt - as required
Baking powder - 1/2 tsp
Chat Masala - 1 tsp (to sprinkle)





Method:

Soak the lentils in water for 2-3 hours. Drain and grind to a paste. There is no need to add extra water.
Mix all the ingredients, except the chat masala with the lentil paste.
Let it stand for 10 minutes.
Transfer the mixture into a steamer or a pressure cooker and steam it for 7 minutes. The lentils should be almost cooked now.
Grease a baking tray or dish with oil and transfer the mixture into it. Shape into a thickness of 1/4 inch. Smoothen the top with the back of a spoon.
Bake in a preheated oven at 200 degrees Centigrade, for about 15-20 minutes till the top is golden brown.
Cut into squares and serve sprinkled with chat masala.
