Thai Chicken... Oozing Flavours!

This may sound quite a fancy thing to make at the end of a working day, but it is fabulously easy and fabulously quick and every ingredient would be found in your pantry and refrigerator if it is well stocked. There is this show that comes on TV called 'Jagees Cookbook' presented by celebrity chef Jagee John. I don't get the channel here in Singapore, but there are some episodes available on YouTube and that is where I found this recipe. I have no intentions of over ruling a celebrity chef's recommendations, but please do not agonise over the chicken cuts. Use whatever pieces are available to you for the recipe and as a further speedy inducement, even boneless breast pieces are fine:)


INGREDIENTS:
Chicken, whole leg pieces - 900 grams
Garlic - 3 to 4 flakes
Ginger - 2 inch piece
Cumin Seeds - 1/2 teaspoon
Cinnamon Powder - 1/4 teaspoon
Red Chilly Powder - 3 teaspoons
Fresh Coriander (Cilantro) Leaves - 3 tablespoons, roughly chopped
Lime Juice - of 1/2 a lime
Vegetable Oil - 3 tablespoons
Salt - as needed.

METHOD:
Take the chicken legs and make deep gashes on them.


Put all the items in the list of ingredients (except the chicken) into a grinder and make a smooth paste out of it, without adding any water (if you must add water, add very little, just to get it ground well without making the marinade runny). Transfer the paste into the bowl containing the chicken pieces and rub it well into the pieces.

Keep the marinated chicken in the refrigerator overnight, or for 6 hours minimum.
Preheat the oven to 200 degrees C.
Line a baking tray with a greased aluminium foil and arrange the marinated chicken pieces on it.
Bake it for 30 to 40 minutes.
Turn the chicken pieces once in between for even cooking.



It is always good to have something up your sleeve that you can cook quickly and simply, without sweating. This is that something. I have specified the red chilly powder amount as 3 teaspoons. It is totally up to you. Some like it hot. I like it very hot. So I have added a little more than 3 teaspoons. I love the tangy fire of Thai cooking:)
I promised myself that I will not write unending adjectives to describe the taste of this chicken. But I cannot resist the temptation to say that, if you decide to keep the wherewithal of this recipe with you... it could be a lifesaver!
