Vanilla Pound Cake... after days of procrastination!

No longer is baking a cake considered a skill. My baking happens on and off because of my impatience and hurriness for routine things to get through. I procrastinate and procrastinate... and finally bake.

This is a very basic cake and that is reason enough to include the recipe here. Not a fancy cake, just a plain ordinary cake. Which is absolutely necessary in your repertoire and this one is beautiful and delicious, to have with sugarless tea or coffee (the cake substitutes, you see!). Perfect for people who are less keen on sugarcraft (in the tea/coffee, I mean!).


I made this in my no-frills aluminium bundt pan (below) that I picked up from a local shop nearby... although the big stores have the non-stick and the silicon ones, my simple aluminium one worked and unmoulded better than any of the 'frilled' ones:-)




The recipe source is this. And, this is a no-fail cake, I assure you!

INGREDIENTS:
Plain Flour - 100 grams
Butter - 100 grams, at room temperature
Granulated Sugar - 100 grams (I used the normal fine grained sugar)
Eggs - 2
Vanilla Extract - 1 tsp
Baking Powder - 1 tsp
Milk - 2 tbsps

METHOD:
Preheat the oven to 180 degrees C.
Grease the bundt pan with butter and sprinkle plain flour. Tap to remove the extra flour.
Sieve the plain flour and baking powder together twice or thrice, so that both get evenly distributed.
Using a hand-held beater, cream the butter and sugar till well mixed. (It is okay if some sugar grains remain).
In another bowl, beat the eggs till they are fluffy.
Add the beaten eggs in two batches to the butter sugar mixture, beating in between.
Add the milk and mix well.
Add the vanilla extract and mix.
Using a wooden spatula, FOLD IN the flour+baking powder mix into the butter-egg mix in batches. Mix well.
Pour into the bundt pan and bake at 180 degrees C, for 35 minutes (mine got done in 30 minutes).
Unmould when slightly cool.
It comes out beautifully!



And as you have seen the easiness with which you can breeze through this cake making... it is as voluptously and seductively easy to eat as well!

Made it 2 weeks back(sorry for late comment)...it was really yummy and kids finished it in one day..
