Shredded Chicken... Can it get easier than this?

I'm not sure how many chicken dishes I can/have offered, but this one is more of a suggestion than a recipe. When you are rushed. Or when you want a change from the normal grills and curries. Or when you want to put your feet up and relax. What you would need in the freezer is some chicken, cooked with salt or not cooked, either is fine. Take them out, cook it with salt and pepper, if not already cooked. Cool them, or thaw them if you are using frozen cooked chicken... and shred them. Go on with the recipe or the suggestion as I would like to call it:)


INGREDIENTS:

Cooked Shredded Chicken - 2 cups
Onion - 2, medium, chopped fine
Ginger - 1 inch piece, chopped fine
Garlic - 4 flakes, chopped fine
Green Chillies - 2, chopped fine
Fresh Cilantro - chopped fine, a handful
Turmeric Powder - 1/4 tsp
Red Chilly Powder - 1/2 tsp
Coriander Powder - 1 tsp
Garam Masala or Chicken Masala - 1/2 tsp
Oil and Salt.



METHOD:

Heat a little oil and add the onions.
As they turn transparent, add the ginger, garlic and green chillies.
Once they turn golden brown, add the turmeric powder, red chilly powder and coriander powder. Fry for a few seconds.
Add the cooked shredded chicken and mix well.
Add the garam masala or the chicken masala. Mix.
Add salt keeping in mind that the chicken has been cooked with salt. Taste and add salt.
Once everything has been mixed and incorporated well, garnish with chopped cilantro.

Serve with a salad... something like the one below... to spice things up:)



Serve with bread or rice or cous cous.
