Orange Pound Cake... Citrus Loveliness!
Something that can be done in a jiffy? Anything jiffy-er than this would be buying a loaf of cake from the store! Baking is always happiness. Lovely. Beautiful. And I like to keep it simple. No frosting. No icing. Actually the truth is that I still need to perfect frosting and icing before putting them here in front of the whole world! Till then, I will stick to simple cakes and bakes.
Orange Pound Cake. The citrus-y flavours, the freshness, the comfort. The recipe is adapted from here.
INGREDIENTS:
All Purpose Flour - 2 cups
Baking Powder - 2 teaspoons
Unsalted Butter - 1/2 cup
Vegetable Oil (I used Sunflower Oil, you can use any neutral oil) - 1/4 cup
Vanilla Extract - 1 teaspoon
White Sugar - 3/4 cup
Eggs - 2
Fresh Orange Juice - 1/2 cup
Grated Orange Zest - of 1 large navel orange (around 1 to 1 1/2 tablespoons)
Salt - 1/2 teaspoon
Milk - 1 tablespoon
METHOD:
Grease a 9 x 5 x 3 loaf pan and keep aside.
Preheat the oven to 180 degrees C.
Put in the all purpose flour, salt and baking powder in a large mixing bowl and sift them together, thrice (pics 1, 2 & 3) and keep aside.
In a bowl, measure out the butter, sugar, vanilla extract and vegetable oil (pics 4, 5, 6 & 7).
Beat them together using an electric beater till they are well creamed (pic 8).
Add in the 2 eggs, one at a time, creaming them well in between (pic 9).
Grate in the zest of the orange to the mixture (pics 11 &12).
Add in the fresh orange juice and mix well with a spatula (pics 13 & 14).
Add in the dry flour mixture in batches and FOLD it in till well mixed (pic 15).
Add the milk into the mixture and mix.
Transfer the mixture into the greased pan (I divided my mixture between two aluminium foil loaf pans and made two small loaves) (pic 16).
Bake for 45 minutes to 1 hour, till it is done and an inserted skewer comes out clean (mine got done in 45 minutes).
Remove from the oven and let stand in the pan for 15 minutes. Then turn the cake into a wire rack and cool.
Is this not easy? It is the loveliest, softest cake with a sudden, bright, fresh taste of oranges!

Like the one I was listening to when I was baking this... the one from Asterix and the Vikings motion picture by Celine Dion... which tells you to let your heart decide whether your decisions are right or wrong... let not the world do it for you! If you think you will find happiness in a certain decision... just take the dive! And forget about what others opine!
