Dates Loaf Cake... in minutes!

This is a quick post. And here I go, straight to the point. Dates Loaf Cake. Quick and easy to make.


The recipe has been sourced from here. With a little alterations here and there, ofcourse!
I reduced the amount of sugar mentioned in the original recipe, because dates are sweet anyway and I prefer fruit cakes and tea cakes a bit less on sugar. It depends on your taste entirely.The original recipe cake batter sounded a bit bland, I'm sure it would taste great, bland or not, but I added a bit of cinnamon powder to it. Again, that is totally optional.


INGREDIENTS:
Chopped Dates - 1 cup
Bicarbonate of Soda - 1 and 1/2 teaspoon
Boiling Water - 1 cup
Soft Butter - 2 tablespoons
Light Brown Sugar - 1/2 cup (the original recipe calls for 3/4 cup sugar, but I guess that is for the real sweet toothed ones:)
Egg, beaten - 1
Cinnamon Powder - 1/2 teaspoon
Self Raising Flour - 1 cup
Plain Flour - 1/2 cup

METHOD:
Preheat the oven to 180 degrees C.
Grease a loaf tin.
Sift both the flours once and keep aside.
Place the chopped dates, soda bi carbonate and boiling water in a bowl and stir. Keep aside and proceed with the mixing required for the cake.
In another bowl, cream the butter with an electric beater. Add the sugar and beat well till they are well mixed. Add the beaten egg and mix well. Dont worry if the sugar grains remain.
Add the dates mix (without draining the liquid) to the butter-sugar mix. Add the cinnamon powder. Mix well with a wooden spoon.
Add the flours in two or three batches and gently FOLD IN using the wooden spoon till they are well mixed.
Spoon in the cake mix into the greased tin and bake at 180 degrees C, for 35 minutes.



This cake is very moist and will stay fresh in the refrigerator for long. A small run in the microwave or oven should do the trick:) To enjoy with your cuppa!
